Zucchini in Tomato Sauce

4 small - medium zucchinis
2 T olive oil
1 onion, sliced
handful of mushrooms, sliced
2 cloves garlic, minced
1 (28oz) can whole tomatoes, coarsely chopped or mashed
1/2 tsp oregano
1/2 tsp salt
1/4 tsp pepper

Slice zucchini, salt lightly and let drain in colander. Set aside. Saute onion and mushrooms in oil just until onions turn transparent. Add garlic, cook 30 seconds more. Add tomatoes, oregano, salt and pepper; simmer 30 minutes. Add rinsed, drained zucchini to sauce and cook 30 minutes longer.
