Zucchini Squares

3 cups zucchini (one large or 2 medium), thinly sliced
1/2 tsp salt
1/2 cup onion. thinly sliced
2 T fresh parsley, chopped
1/2 tsp dried oregano
1 clove garlic, minced
opt: sauteed mushrooms
1 cup grated cheese - combo of fresh parmesan and cheddar or your choice
4 eggs, slightly beaten
1 cup flour
1-1/2 tsp baking powder
1/2 tsp salt
1/8 tsp pepper
1/2 cup melted butter

Sprinkle zucchini with 1/2 tsp salt, let sit in colander for 10 minutes. Press or squeeze lightly to remove some of the liquid.
In large bowl, mix zucchini, onion, parsley, salt, optional mushrooms, garlic and cheese. Stir in eggs and mix well.
In a small bowl, combine flour, baking powder, remaining 1/2 tsp salt, and pepper. Add to zucchini mix with melted butter and stir until combined.
Pour into greased 9x13x2" baking dish.
Bake at 350° for 25 minutes or until golden. Cut into squares and serve warm.
I like to serve with cool, fresh tomato slices.
Makes about 4 dozen. Freezes well.
