Zucchini Parmesan

2 med-large zucchini, sliced
2 eggs
2 T flour
3/4 tsp salt
shredded mozzarella cheese
pizza or marinara sauce

Whisk together eggs, flour and salt until smooth. Coat zucchini slices in batter and fry in 1 inch canola oil until browned on one side, flip and cook until browned on the second side. Remove to platter lined with paper towels.

Coat bottom of baking pan with pizza or marinara sauce. Layer with batter fried zucchini and top with mozzarella cheese. Bake at 375 until cheese is melted and browned, about 20-30 minutes.
