Zucchini Pancakes
Source: combination of recipes

Mix together:
2 cups grated unpeeled zucchini pressed between paper towels
1/3 cup parmesan cheese
3/4 cup flour
3 eggs
3 T butter, melted
1-2 T water
salt and pepper to taste
opt: 2 tablespoons grated or finely chopped onion
opt: handful of chopped frozen spinach, thawed and squeezed dry

Preheat a frying pan over medium heat. Combine all pancake ingredients in a bowl, except for the water.
Mix until smooth, then add enough water to make a thin batter. Mix until just combined.
Spoon about 1/4 cup of batter to greased pan and cook 1-2 minutes per side.
Serve plain or top with salsa, tomato sauce, or sour cream and chives.
