Zucchini Jack Casserole

3 T flour
2 tsp baking powder
1/2 tsp salt
4 eggs, lightly beaten
1/2 cup milk
2 lbs small zucchini, sliced 1/4" thick
3 cups (12 oz) shredded Monterey Jack
1 small onion, finely chopped
7 oz can diced green chiles
1/4 cup chopped fresh parsley
1 clove garlic, minced
1 cup seasoned croutons (or breadcrumbs)
3 T butter or margarine, melted

Preheat oven to 350°. Combine flour, baking powder, salt, eggs & milk, stirring until smooth. Stir in zuchhini, cheese, onion, chiles, parsley & garlic. Spoon into a greased 13x9" baking dish. Combine croutons & butter, stirring until coated. Sprinkle on casserole. Bake, uncovered 35-45 minutes.~~
