Zucchini "Crab" Cakes

Cindy's note: I don't really think that these taste like crab cakes, but I like them as zucchini cakes. Others say that they do taste like crab cakes.
2 1/2 cups grated zucchini (squeeze out excess moisture)
1 egg, beaten
2 tablespoons butter, melted
1 1/2 cups bread crumbs (I use whole wheat)
1/4 cup minced onion
1/2 tablespoon Old Bay Seasoning
1/4 cup all-purpose flour
Nonstick cooking spray
In a large bowl, combine zucchini, egg, and butter. Stir in bread crumbs, minced onion, flour and seasoning. Mix well.
Shape mixture into patties. (I use a 1/3 cup measure - it makes about 7 patties). Place patties on a baking sheet sprayed with nonstick cooking spray, and then spray the top of the patties.
Bake at 350 degrees F about 30 minutes or until golden. Turn them over midway through. OR - In a medium skillet, heat oil over medium high heat until hot. Fry patties in oil until golden brown.
Makes 4 servings
