Zucchini - batter fried
Batter Fried Zucchini and Onions with Oven Roasted Tomatoes
2 med-large zucchini, sliced
2 eggs
2 T flour
3/4 tsp salt
Whisk together eggs, flour and salt until smooth. Coat zucchini slices in batter and fry in 1 inch canola oil until browned on one side, flip and cook until browned on the second side. Remove to platter lined with paper towels.
Use in Zucchini Parmesan or as an appetizer dipped in Honey Mustard Dipping Sauce.
