Squash, Sweet Potato and Apple Bake
2 lb. butternut squash and/or sweet potatoes
2 baking apples
2 T brown sugar, honey or maple syrup
opt: 1/4 cup apple juice or orange juice
1 T butter
1/2 tsp salt
Core and slice squash, potatoes and apples, cut into slices. Arrange squash and potatoes in ungreased baking dish, 11 1/2" x 7 1/2" x 1 1/2". Top with apple slices. Sprinkle with brown sugar or syrup, salt lightly, dot with butter and cover with foil. Bake at 350 for 50 to 60 minutes or until tender. 6 servings.
