Cheesy Spinach Squares (updated 6/18/17)

2 T butter
2 T onion, minced
1/2 cup flour
1 tsp baking powder
1 tsp salt
2 eggs
1 cup milk
8 oz shredded cheddar cheese (or mix of cheeses)
1 (10 oz) package frozen chopped spinach, thawed and squeezed dry

Saute onion in butter until soft.
Whisk together flour, baking powder, salt, eggs and milk.
Stir in cheese, spinach, and sauteed onion/butter, mix until evenly combined.
Spread into greased or sprayed 8x8 or 9x9 pan (use 8x8 pan for thicker squares)
Bake at 375 degrees for 30 minutes. Cool 15 minutes and cut into squares.
(Freezes well--defrost and reheat at 325 degrees for 12 minutes).
