Spinach - simple saute

Heat 1 T oil and 1 T butter in large skillet.
Saute choice of garlic, shallot and/or green onions in oil/butter until aromatic, about 30 seconds.
Add fresh spinach, cook just until wilted.
Season with salt and pepper.
Drizzle with with balsalmic vinegar or fresh lemon juice.

Notes:
if using mushrooms, saute in dry pan until lightly browned before adding oil, butter and garlic.
Can top with fresh grated parmesan, if desired.
