Sauerkraut - fast and easy
Source: combination of recipes (Eating Well and Alton Brown)

1 T oil
1 small onion, halved and sliced
1 apple, thinly sliced
10 oz cabbage, shredded
1/4 cup cider vinegar
1/4 teaspoon salt
3/4 cup beer mixed with 1 T brown sugar

Cook onion and apple in oil over medium-high heat in heavy skillet, stirring constantly, until transparent and soft.
Add cabbage, vinegar and salt and cook, stirring often, until just wilted, about 2 minutes.
Add beer and brown sugar, bring to a boil.
Cover, reduce heat to a simmer, and cook until cabbage is tender, about 10 minutes.
