Roasted Spaghetti Squash with Roasted Tomato Sauce
Source: combination of recipes

1 1/2 pints cherry or grape tomatoes, halved
1 large onion, cut in 1 inch chunks
1 tsp minced garlic
1/2 tsp dried basil
1/2 tsp dried oregano
salt and pepper to taste
3T olive oil
1 spaghetti squash
fresh grated parmesan
opt: sauteed mushrooms

Preheat oven to 425
Combine tomatoes, onion, garlic and seasonings with the oil, place in 13x9 pan.
Halve spaghetti squash lengthwise and scoop out seeds. Place cut side down on oiled baking sheet, poke through skin a few times with a fork.
Place both pans in oven and roast for 40 minutes.
Scrape strands of squash into dish, top with tomato mixture, optional sauteed mushrooms and parmesan.
