Roasted Cauliflower
Source: combination of recipes

1 head of cauliflower (cut in small florets or sliced)
about 2 T olive oil
coarse salt and freshly ground pepper to taste

Optional:
sliced shallots or leeks
minced garlic
balsamic vinegar
herbs of choice
fresh grated parmesan cheese for last 10 minutes

Preheat oven to 400 degrees.
Toss cauliflower with oil, salt and pepper and choice of optional ingredients.
Place on rimmed baking sheet.
Roast until lightly browned and tender, 30 minutes, tossing once.
