Pickled Beets

6 roasted or cooked beets, peeled and cut in slices or wedges
1 cup cider vinegar
1/2 cup sugar
1 cup water
salt to taste

Arrange beets in 1 or 2 jars
In a small pot boil the rest of the ingredients and pour over the beets. (depending on size of beets, may need to add a little water to cover completely, or increase amount of pickling juice)
Close tightly and refrigerate.
