Baked Italian Cauliflower
1 head cauliflower, broken into florets
1/2 cup chopped onions
1 clove garlic, minced
1-1/2 cups canned tomatoes, drained
1 tsp dried oregano
1 tsp salt
1/8 tsp pepper
3/4 cup shredded cheese
3/4 cup coarse cracker crumbs
Boil cauliflower 20 minutes, until just tender drain.
While still hot, combine in bowl with onion and garlic.
Stir in tomatoes, oregano, salt and pepper. Pour into greased 2 qt casserole dish.
Combine cheese and cracker crumbs, sprinkle over cauliflower.
Bake at 400 for 20 minutes.
Makes 6-7 servings
