Green Bean Casserole - fresh ingredients
Source: combination of recipes

1 to 1 1/2 lb green beans, cooked, drained
1 large shallot, minced (1/4 cup)
3 T butter
1/2 pound fresh mushrooms, sliced
3 T flour
3/4 cup chicken broth (veggie or mushroom broth)
3/4 cup milk
1/2 tsp worcestershire or soy sauce
1/2 tsp salt or to taste
1/8 teaspoon pepper

Topping:*
2 cups halved, thinly sliced onions
1 T butter
1/2 cup soft bread crumbs (pulse 1-2 slices white bread in food processor)
*or use prepared ff onions from a can

Saute shallot and mushrooms in butter until tender.
Stir in flour until smooth. Gradually stir in broth and milk, add worcestershire or soy sauce. Bring to boil. Cook and stir for 2 minutes or until thickened. Season with salt and pepper to taste.
Stir in beans. Transfer to a 2 qt baking dish sprayed with cooking spray.
Bake, covered, in 375 oven for 15 minutes.
For topping: Cook onions in butter over medium-low heat until golden brown. Add bread crumbs, cook until dry and golden brown. sprinkle over casserole. Bake uncovered 7-10 minutes longer or until heated through and topping is browned. Let stand for 10 minutes before serving. *if using prepared canned ff onions, bake 5 minutes on top of casserole
