Easy Creamed Spinach
1 T butter
1 shallot, minced
1 10 oz pkg frozen spinach, thawed and drained
3 oz cream cheese
opt: 1 T fresh lemon juice or cider vinegar
salt and fresh ground pepper to taste
Saute shallot in butter until tender, add spinach and cook until hot.
Add cream cheese and lemon juice or cider vinegar, cook and stir until creamy.
Add salt and pepper to taste.
