Corn Fritters (updated 4/27/23)
24 fritters

1 cup flour
1 T sugar
1 tsp baking powder
1/2 tsp salt
1 egg
1/2 cup milk, more or less as needed
2 cups cooked corn
Oil, for frying
10x sugar or warm syrup

Mix flour, sugar, baking powder and salt in a bowl with a wire whisk until combined.
Beat egg and milk in another bowl. Stir into flour mixture, stir in corn.
Heat 1" oil in saucepan. Drop fritter batter by tablespoonfuls into hot oil. Fry 2 1/2 to 3 minutes, turning once, until golden brown. Remove to wire rack that has been covered with paper towels. Keep fritters warm in a low (200) oven until ready to serve.
Serve warm, sprinkled with 10x sugar or warm syrup.
