Creamy Brussel Sprouts, Potato and Ham Skillet
2 cups brussels sprouts, cleaned and halved
1 large or 2 small potatoes, peeled and cubed
2 cups ham, cubed
1 shallot, minced
2 T butter
2 T flour
1 cup milk
salt and pepper to taste
optional: 4 oz cheddar cheese
Saute brussels sprouts and potatoes in butter until almost tender. Add shallot and ham, cook a few minutes more.
Toss with flour, stir until evenly coated. Add milk. Cook and stir until sauce is thickened, salt and pepper to taste.
Optional - add cheese and cook until melted and stirred in.
