Broccoli Cheese Side Dish
Source: slightly adapted from allrecipes

8 cups fresh broccoli florets
1/2 cup (1 stick) butter
2 T flour
1 small onion, chopped
1-1/4 cups milk
4 cups shredded swiss cheese (or combo of cheeses of choice)
2 eggs, beaten
salt and pepper to taste

Bring salted water to boil in large saucepan.
Cook broccoli for 2 minutes, drain
Melt butter in same pan over medium heat, add onion and saute until softened.
Add flour and stir until bubbly. Whisk in milk and cook until thickened.
Mix in cheese and eggs, cook until cheese is melted. Stir in broccoli, season to taste.
Bake at 325 until bubbly, about 30 minutes.
Makes 6-8 servings
