Broccoli Cauliflower Gratin
Source: combination of recipes

6 cups cauliflower and/or broccoli, cut in bite size pieces
2 T butter
1 onion, chopped
1 clove garlic, minced
1/4 cup flour
2 cups milk
1 tsp salt or more to taste
opt: pinch ground red pepper
1 cup shredded cheddar cheese
1 oz cream cheese

Cook cauliflower/broccoli in boiling, salted water just until crisp-tender, 3 minutes. Drain well and set aside.
Saute onion in butter until softened, add garlic and cook 30 seconds more.
Sprinkle flour over onions and garlic. Cook, stirring constantly, until slightly dried out.
Whisk in milk, salt and pepper and bring to a boil, cook until thickened.
Add cheeses and stir until melted.
Add cauliflower/broccoli and transfer to a sprayed casserole dish.
Bake at 375 until heated and browned, about 20 minutes.

Serves 4-6
