Black Bean Burritos

2 (15-ounce) cans no-salt-added black beans, drained and rinsed, or 3 cups cooked beans
1 tomato, chopped
3 green onions, coarsely chopped
1 jalapeno pepper, minced
opt: 1/4 cup chopped cilantro
2 cups cooked brown rice
1/4 cup grated Monterey Jack
1/4 cup grated cheddar
1 clove garlic, finely chopped
3 T lime juice
3 T light olive oil
1 tsp hot sauce, more or less to taste
opt: chili powder to taste
sea salt and ground pepper, to taste
4 large whole wheat tortillas
In a large bowl, mix together beans, tomato, green onions, jalapeno, cilantro, cooked rice and cheese. Set aside.
In a small bowl, combine garlic and lime juice. In a slow, steady stream whisk in oil until dressing has
slightly thickened. Stir lime dressing into bean mixture and season with hot sauce, salt and pepper to taste.
Spread 1/4 bean mixture on each tortilla. Fold the edges up and roll up into burritos.
Serve immediately, or heat on a baking sheet in a 350 oven until cheese has melted and burritos are heated through, about 15 minutes.
