Refried Bean Stuffed Peppers
4 green peppers or large poblano peppers
1 lb prepared refried beans
grated cheese cheddar or cheddar and mozzarella
salsa
Cut peppers in quarters or halves, depending on size, remove seeds and membranes.
Soften peppers by dropping in boiling water or cooking covered in microwave for 2 minutes.
Allow peppers to drain and divide refried beans between pepper pieces and place in a 9 x 13 baking dish.
Top each pepper with cheese and bake at 350 for 15-20 minutes or until heated through and cheese is browned.
Serve with salsa.
