Asparagus

Wash and trim any tough ends on the asparagus.
Use desired method to cook:
Steam or boil over high heat until the asparagus turns bright green and is tender-crisp when a fork is inserted in the stalk, about 3-5 minutes.
To roast: toss asparagus with olive oil, salt and pepper, place on baking sheet. Roast at 425 for about 12 minutes.

Easy sauces for serving:

Dijon Mayo

Mix together:
1/4 cup mayo
1 T dijon
squeeze lemon juice


Creamy Cheese

4 oz cream cheese
1 tsp dijon mustard
1 tsp lemon juice
1/4 cup milk, or to desired consistancy

Heat cream cheese, stirring over low heat until smooth. Stir in mustard and lemon juice.
Slowly stir in milk to desired consistency.
