Spicy Cheeseburger Soup

2 cups cubed potatoes, peeled
1 1/2 cup chicken or beef broth
1/2 cup chopped onion
1/2 cup chopped green pepper
1 jalapeno pepper, chopped
1 clove garlic, minced
1 tsp salt

1 lb lean ground beef, browned and drained of fat

2 1/2 cups milk
3 T flour

1/2 lb Velveeta or American cheese, cubed
1/4 tsp cayenne pepper (more or less according to taste)


Combine potatoes, broth, onion, green and jalapeno peppers, garlic and salt in a large pan and cook until potatoes are tender, about 15-20 minutes.
Stir in ground beef.
Combine flour and milk and stir into soup. Bring to a boil then reduce heat.
Stir cheese and cayenne into soup, just until cheese is melted.

Makes 4-6 servings
