Chicken Stock

Leftover chicken carcass, bones and scraps
Water to cover by 1 inch
2 tsp salt
1 small onion
1 stalk celery or tops of stems with leaves
opt: parsley

Brown chicken bones and scraps in stockpot. Add remaining ingredients.
Bring all to a boil, reduce heat, simmer 1 1/2 hours. Strain, degrease.
