Baked Beef Stew (tomato base) updated 3/1/24

2 lbs beef stew meat, cut into 1 inch chunks
2 med onions, cut in 1/8's or 1 inch pieces
3 ribs celery, 1 inch pieces
4 carrots, 1 inch pieces
4 potatoes, peeled, cut into 1/4's or 1/8's, closest to 1 inch pieces
opt: 1 cup peas, 1 cup green beans, stirred in at end of cooking
1 1/2 cups tomato sauce
1 1/2 cups water
1 1/2 tsp kosher salt (1 tsp table salt)
1 tsp sugar
3 T tapioca

OVEN: Combine all in roasting pan.
Bake, covered at 350 for 2 to 2 1/4 hours (opt: 250 for 4 hours) or until beef is tender.

CROCKPOT: Low 10-12 hours, High 5-6 hours
