Asian Mushroom Soup

2 T oil
4 cups sliced mushrooms, cremini and button
1 large chopped
1 celery stalk, chopped
5 cups chicken stock, preferably homemade
1/4 cup uncooked rice, barley or farro
3 T soy sauce
salt and fresh ground pepper, to taste

Sauté mushrooms, onion, and celery in oil for 8-10 minutes.
Stir in chicken stock, uncooked rice, and soy sauce.
Bring to a boil over medium-high heat.
Reduce heat to low. Simmer, covered, 60 minutes.
Opt: puree some of the vegetables if desired
Season to taste, serve with chinese fried noodles
