Tomato Meat Sauce

1 med onion, chopped
1 med bell pepper, chopped
1-2 cloves garlic, minced
1 lb ground beef
1 tsp kosher salt
1/4 cup red wine
1 (28 oz) can tomato sauce or crushed tomatoes, I like Pomi in the box
1 tsp dried oregano
1 tsp dried basil
opt: pinch red pepper flakes
opt: parmesan rind

Saute onion and pepper in oil until softened. Add garlic and cook 30 seconds more.
Crumble beef and add to pot with the salt. Cook just until no pink remains.
Add wine and cook until reduced.
Add tomato sauce, herbs and parmesan rind if using; simmer until desired thickness - about 30 - 60 minutes. Remove rind.
