Pineapple Cheese Casserole

2 cups fresh pineapple, cut in small dice, with juice (can use 20-oz can pineapple chunks, with 3 T of the juice)
1/2 cup sugar
3 T flour
1 cup shredded ceddar cheese
1/4 cup butter, melted
1/2 - 1 cup Ritz cracker crumbs

Drain pineapple, reserving 3 T of juice.
Whisk together sugar and flour. Stir in reserved pineapple juice, then cheese and pineapple, mix well. Pour into greased 1-quart casserole dish.
Combine butter and cracker crumbs and sprinkle on top.
Bake at 350 degrees for 45-50 min or until browned. Cool until set about 10 minutes.
Serves 4-5


Pineapple Side Dish for Ham

3/4 cup sugar
1 (20 oz) can crushed pineapple
2 T cornstarch
2 eggs, beaten
1/4 cup water
butter
opt: cinnamon

Mix all ingredients together, place in greased 1 qt casserole dish.
Dot with butter and sprinkle with optional cinnamon.
Bake at 350 for 30-45 minutes.


Scalloped Pineapple

4 - 5 slices day old bread, cubed
1 (20oz) can crushed pineapple in juice, drained
1/2 cup melted butter
3/4 cup brown sugar
4 eggs, beaten

Combine bread and pineapple, place in greased 1 1/2 quart baking dish.
Mix the butter, sugar, and eggs. Pour over bread mixture. Sprinkle with cinnamon.
Bake 350 until puffed and golden, about 40 minutes.
