Mayonnaise
Source: Combination of recipes

1 large egg yolk
pinch salt
1 tsp water
1/2 tsp dijon mustard
1 tsp fresh lemon juice
1 tsp cider vinegar
1 cup canola or vegetable oil, or as needed

Whisk together yolk, salt, water, mustard, lemon juice and vinegar until smooth.
Whisk in oil, only a few drops at a time in the beginning until mixture is thickened and creamy (emulsion). Continue whisking in oil in a steady stream until thick.
Makes 1 cup mayonnaise
