Marinara Sauce

1-2 T olive oil
1-2 cloves garlic, minced
1 (28-35oz) can tomatoes, whole or crushed (or 2 lbs fresh - peeled, seeded and reduced)
1/2 tsp kosher salt
1/4 tsp black pepper
1-2 tsp dried basil (or 1-2 T fresh basil, added just before serving)
opt: splash of red wine, 1/4 cup sauteed onions, handful of fresh grated parmesan

If using whole tomatoes, break up with a wooden spoon or your fingers.
Cook garlic in oil 30 seconds until soft and fragrant, add remaining ingredients.
Simmer until thick 20-30 minutes. (Can use stick blender at this point for desired smoothness).

Opt: Add choice of cooked meatballs or sausage, simmer in sauce
Meat Sauce - add seasoned ground meat that has been browned with onions and garlic and skimmed of fat to the sauce.
