Mock Hollandaise Sauce #1

4 oz cream cheese
1 egg
2 T fresh lemon juice
1/4 tsp salt
1/4 tsp black pepper.

Mix well. Cook over low heat 2-3 minutes or until smooth and simmering, stirring constantly.


Mock Hollandaise Sauce #2

2/3 cup mayonnaise
1 T lemon juice
1/2 tsp dijon mustard
Salt to taste

In a small saucepan over medium-low heat, combine all ingredients. Stir until warmed through.
