Creamy Cheese Sauce

8 ounces sharp cheddar cheese (or a mix of cheddar and pepper Jack), grated on large holes of a box grater
1 tablespoon corn starch
1 cup milk
opt: 2 teaspoons hot sauce

Toss cheese and cornstarch together, place in medium saucepan.
Add 1 cup milk and hot sauce. Cook over low heat, stirring constantly with whisk until melted and thickened (about 5 minutes).
Thin to desired consistency with additional milk, if needed.
Serve immediately - great with fries, tortilla chips, burgers, hot dogs, broccoli, baked potato, etc.
Makes about 1-1/2 cups
