Cream Sauce and Variations

2 T butter or olive oil
1 clove garlic
opt: shallot, onion
2 T flour
1 cup liquid (milk, cream, broth)
2 T white wine or lemon juice
1/2 tsp salt
Opt:
1 tsp basil or herb
ground red pepper
1/4 cup grated cheese
shrimp or chicken
1/4 cup sundried tomatoes, chopped vegies

Saute garlic, onion, shallot and optional ingredients in butter/olive oil. Add flour to make a roux, stir until smooth. Add remaining ingredients, cook until thickened. Enough for 1/2 pound pasta.
