Cindy's favorite Spinach Salad
Source: combination of recipes

8 mushrooms, sliced
4 T butter
salt, to taste
1 T red wine vinegar
1 tsp honey
1 tsp dijon mustard
6 cups baby spinach, loosely packed
2 cups coarsely chopped raddichio
4 hard boiled eggs. sliced
red onion, thinly sliced
Kosher salt and fresh ground black pepper

Saute mushrooms in butter, season with salt. Add red wine vinegar, honey and mustard.
Divide spinach and raddichio evenly between 4 plates, top each with egg slices and red onion slices.
Drizzle with mushrooms/dressing and season with kosher fresh ground pepper and more salt, if needed.
