Simple Vinaigrette

This is simple and delicious. It makes a generous amount, but you can keep the extra in the fridge in an airtight container for several days.

1/4 cup balsamic vinegar (can use red wine or cider vinegar)
1 tablespoon Dijon-style mustard
1/4 cup extra-virgin olive oil
1 teaspoon freshly cracked black pepper

Combine all ingredients in a small glass jar topped with a leakproof lid. Shake vigorously for up to 1 minute. Makes enough to generously dress 4 salads.
