Roasted Beet and Goat Cheese Salad
12 oz assorted salad greens
4-6 roasted beets, quartered
4 oz goat cheese, crumbled
Add ins: pecans or walnuts, thinly sliced red onion, orange segments, sliced pear or apple, sliced avocado, raisins or dried cranberries, sliced turkey, hard boiled egg slices
5 T olive oil
2 T red wine vinegar
salt, fresh ground pepper to taste
Whisk together vinaigrette ingredients.
Assemble greens, beets, goat cheese and optional ingredients on individual serving plates, drizzle with vinaigrette.
4 to 6 servings.
