Pasta Salad
Use whatever ingredients you have on hand!
12 oz rotini, shells, penne or pasta of choice
1 cup sliced zucchini, cucumber and/or radish
1 cup halved cherry tomatoes, or chopped tomato
1/4 cup sliced scallions or red onion
1/4 cup sliced pepperoncini (pickled banana peppers)
1 cup sliced mixed olives
1/2 cup grated hard cheese - parmesan, romano, etc.
opt: sliced green or red pepper
opt: chopped broccoli and/or cauliflower
opt: 1 cup sliced salami, pepperoni or summer sausage
opt: 1 cup cubed cheese - mozzarella, feta or cheddar
Dressing:
1/2 cup oil
1/3 cup red wine vinegar
2-3 T juice from pepperoncini
1/2 tsp dried oregano
1/2 tsp salt, or to taste
1/4 tsp pepper
Cook pasta according to package instructions, cool.
Mix dressing ingredients, toss with pasta.
Add remaining indredients, taste for seasoning and adjust as needed. Cover and refrigerate at least 30 minutes.
Makes about 10 servings
