Lemon Herb Vinaigrette/Dressing/Marinade
Juice of one lemon
Cider vinegar added to lemon juice to make 2/3 cup
1/2 tsp salt, or to taste
1/4 tsp fresh ground pepper
1/2 tsp oregano
1/4 tsp basil
1 cup light olive oil
optional: minced garlic or shallot, dijon mustard, honey or sugar, additional herbs
Whisk together lemon juice, vinegar, salt, pepper and herbs (and optional ingredients)
Slowly whisk in oil until emusified.
Use as salad dressing or marinade for meats or vegies.
