Kidney Bean Salad
1 (16oz) can red kidney beans, drained and rinsed, or 2 cups dry beans, cooked
1/2 cup celery, diced
1/4 cup red onion, minced
2 hard cooked eggs, chopped
additional optional ingredients:
--1/4 cup green pepper, chopped
--black or green olives
--pickle relish
--diced ham
--tuna
2 cups salad greens
shredded cheddar or fresh parmesan cheese
Combine salad ingredients, toss with choice of dressing below.
Serve over salad greens, sprinkle with shredded cheddar or fresh parmesan.

3 T light olive oil
3 T wine vinegar
1/4 tsp salt
fresh ground pepper to taste
opt: 1/4 tsp oregano
opt: dash dijon mustard
