Insalata Caprese (Mozzarella, Tomato & Basil Plate)
1/2 pound fresh mozzarella cheese, sliced 1/4-inch thick
2 large ripe tomatoes, sliced 1/4-inch thick
1 cup fresh basil leaves
Salt and freshly ground pepper
1/4 cup extra-virgin olive oil
Arrange tomatoes on platter, season lightly with salt and pepper. Top each with a basil leaf, or sprinkle with chopped basil. Top each with a slice of cheese. Drizzle olive oil over all just before serving. Do not let sit in oil or it will become soggy.
Optional: rub platter or bread with cut garlic clove before arranging tomatoes... Bruschetta Caprese
