Coleslaw

2/3 cup mayo
2 T cider vinegar
2 T lemon juice
3 T sugar
1/2 tsp salt or celery salt

1 medium head green cabbage, cleaned, cut in wedges, core removed
1 large carrot, peeled
OR use 1 bag coleslaw mix

Shred the cabbage and carrot by hand with a knife, grater or food processor.

Whisk together dressing ingredients. Pour over cabbage mixture. Stir well. Refrigerate for several hours or overnight, stirring occasionally to blend.
Serves 6-8
