Warm Spinach and Chicken Salad

5 cups fresh spinach, cleaned, dried and torn
6 mushrooms cleaned, dried, sliced
2 whole green onion, sliced
6 oz cooked, cubed chicken
4 slices center cut bacon, chopped
1 T bacon fat drippings
3 T red wine vinegar
2 T lemon juice
2 tsp sugar
1/4 tsp salt
1/4 tsp pepper
2 hard boiled eggs, diced

Place spinach in bowl, add mushrooms, onion, and chicken. Just before serving, fry bacon until crisp and rmove from pan. To hot bacon drippings, add vinegar, lemon juice, sugar, salt and pepper, cook until hot and bubbly. Pour immediately over spinach and toss. Sprinkle salad with egg and crumbled bacon. Serve with pear slices.
