Chicken Salad
2 cups cooked, cubed chicken
1/2 cup celery, finely chopped (about 1 stalk)
1 T onion or scallion, minced
1/2 cup mayonnaise
1 T lemon juice, or to taste
1/2 tsp kosher salt
opt: pinch dried dill, 1 tsp dijon mustard, 1/2 cup grapes
Combine all. Makes 4 servings
