Hearty Beef Salad
2 cups leftover beef, sliced
1 cup red kidney beans, drained
3/4 cup celery, diced
1/4 cup red onion, minced
2 hard cooked eggs, chopped
opt: crumbled bacon, avocado, tomato, croutons
2 cups salad greens or baby spinach
shredded cheddar or fresh parmesan cheese
Combine salad ingredients, toss with choice of dressing (below)
Serve over salad greens, sprinkle with shredded cheddar or fresh parmesan.

1/2 cup mayonnaise
2 T dijon mustard
2 tsp cider vinegar
1/4 tsp salt
dash pepper
Dressing 2:
1/2 cup mayonnaise
1 T pickle relish
1 T ketchup
1/4 tsp salt
dash pepper
dash lemon juice
