Balsamic Vinaigrette

This vinaigrette can be served as a dipping sauce or a dressing for vegetables or salads.

1/4 cup balsamic vinegar
2 tablespoons sherry vinegar, or wine vinegar
1/2 teaspoon table salt
1/4 teaspoon ground black pepper
2/3 cup olive oil

Whisk first 2 ingredients with salt and pepper in a small bowl. Gradually whisk in oil, so the vinaigrette emulsifies. Serve.
