Twice Baked Potatoes

4 russet potatoes
3 T butter, softened
1/2 cup sour cream
1/2 tsp salt
1/4 tsp pepper
1 T chopped green onion
1/2 cup shredded cheddar cheese (more to taste)
paprika, for garnish

Bake potatoes at 350 for 60 min. Remove from oven, let cool 10 minutes.
Slice in half, scoop out out flesh, arrange shells on baking sheet.
Combine flesh with butter, sour cream, salt and pepper, mash until smooth. Mix in green onion and cheese.
Spoon into reserved skins, sprinkle with paprika.
Bake at 375 for another 15-20 minutes or until lightly browned.
