Homemade Tater Tots
Source: combination of recipes

4 large potatoes, unpeeled
2 T onion, minced
1 tsp salt
2 T flour

oil for frying

Poke potatoes a few times with a fork, cook in microwave until tender (about 4 minutes). When cool enough to handle, peel.
Shred potatoes on large holes of grater.
Combine potatoes and remaining ingredients, shape into balls or logs. Form just until potatoes stay together, do not pack too tightly. Place on baking sheet and freeze for 30 minutes.
Fry in hot oil until browned on all sides, drain on paper towels.
