Candied Sweet Potatoes

4 yams
1/4 cup water
1/4 cup butter
1/4 cup brown sugar
1/4 tsp salt

Peel and cut yams into wedges. Put all ingredients into covered skillet or electric frying pan. Cook, covered, until potatoes are barely tender, about 10 minutes. Remove lid, turn up heat and cook until potatoes are browned and glaze is thickened.

(for light recipe, use 2T butter and 2T brown sugar)
